So, for pitmasters and striving all-things-grilled enthusiasts, investing in the right griller is a must. This begs the question: which is a better choice, liquid propane flat top grills or propane gas? 

LIQUID PROPANE VS PROPANE GAS: WHAT'S THE DIFFERENCE?

Propane grills, as the name implies, run on propane/propylene. The propane is stored in a tank that is usually situated outside of the enclosed grill. Propane grills are generally well-built, sturdy, and have a good reputation for cooking food evenly. Propane grills are most suitable for those who barbecue on a weekly basis. 

If you are planning a family BBQ party and need to get grilling in a jiffy, propane grills are definitely the way to go. Propane grills come in various sizes, from smaller grills that fit on a patio to larger grills that can be used to cook for a crowd.

As for the difference between liquid propane or gas propane, at its core, there's not many things to distinguish. In the same way ice cubes and water share are virtually one and the same, with the exception of its physical state, so does the likeness of liquid and gas propane. 

HOW DOES LIQUID PROPANE AND GAS PROPANE WORK?

In essence, propane gas is in its liquid state when it is stored in the tank and put under pressure. But when you turn on the grill and release the propane, it becomes gas, making it ready for grilling. 

WHY DOES GAS TURN INTO LIQUID WHEN UNDER PRESSURE?

A quick science lesson will explain why propane gas turns into a vapor when under pressure. The liquid state of propane is merely a phase change. Propane is a hydrocarbon, which means it is comprised of a carbon and hydrogen molecule.

Hydrocarbons are traditionally volatile and do not like being in the liquefied phase. The same goes for propane. When liquid propane is in its phase, it quickly turns into a gas. This is why the movement of a substance between two phases is referred to as a phase change.

In the case of liquid propane and gas propane, the propane is cooled to a temperature in which it is able to form a liquid. The liquid is then stored in a tank, which is then inhaled and pressurized with a gas. Once the propane is pressurized, it becomes propylene, which is the gas form of propane.

Even if the distinction between liquid propane and gas propane seems quite minimal, there are a number of reasons why propane grills are a better choice than their natural counterparts for your flat top grills. 

For instance, propane serves up gastronomic dishes all within a convenient approach, making it ideal for beating the summer heat with mouth-watering staples like burgers, pork chops, steaks, or hotdogs. Propane is also easier to control and faster to heat, so you won't be consuming as much energy compared to natural gas.

The best part? While you won't leave as much carbon footprint with propane, you won't come short in the bold, smoky flavors it provides.
